2013 Bouquet Rosé Wine

2013 was a banner year for Long Island vineyards. After some damage at budbreak and a very wet June, July was hot and dry, followed by warm, dry and sunny weather through the first half of October. Without pressure from a hurricane, grapes were picked when very ripe at 22-23 brix, with well-blanced acidity and fruity intensity.
Each grape varietal was made into wine separately before blending. Some of the juice was made from pressing red grapes after 24 hours of skin contact. The rest of the juice was made by saignée method: red grapes were de-stemmed and crushed, then macerated for a short period of time before separating the skins from the quintessence juice. Yeasts; Rhône 4600 and T73 to bring out the wine's fruitiness rather than its structure. Fermentation took place at a low temperatrue of 60 degrees F to maintain aromas. The wine was fined with Isinglass and underwent sterile filtration to ensure stability at bottling. No MLF. Alc: 12.5%, RS: 20 g/L or 2%, pH: 3.39, TA: 6.26. Bottled: March 2014.
